Almond Schnitzel
German-style breaded cutlet coated with ground almonds and fried. Served with mushroom sauce and potatoes.

Ingredients
- 4 piece Pork cutlets
- 150 g Ground almonds
- 2 piece Eggs
- 100 g Flour
- 300 g Button mushrooms
- 1 piece Onion
- 200 ml Sour cream
- 60 g Butter
- 200 ml Vegetable broth
- 1/2 piece Lemon
- à goût g Salt and pepper
- 2 sprig Fresh tarragon
Instructions
Step 1
Pound the pork cutlets with a mallet to an even thickness.
Step 2
Beat the eggs. Prepare three plates with flour, beaten eggs, and ground almonds mixed together.
Step 3
Coat each cutlet in flour, then egg, then almonds. Set aside.
Step 4
Sauté the sliced mushrooms and chopped onion in butter. Add the broth and cream. Let reduce for 5 minutes.
Step 5
Heat butter in a pan and cook the cutlets 4-5 minutes per side until golden.
Step 6
Season the sauce with lemon juice, salt, pepper, and tarragon. Serve the cutlets with the mushroom sauce.
