Lebanese Halloumi and Eggplant Stir-fry with Za'atar
Cubes of halloumi and tender eggplant stir-fried in a wok with fragrant za'atar. A taste of Lebanon in one wok toss, packed with protein.

Ingredients
- 250 g Halloumi
- 1 piece Eggplant
- 150 g Cherry tomatoes
- 2 tsp Za'atar
- 2 tbsp Olive oil
Instructions
Step 1
Cut the halloumi into 2 cm cubes and the eggplant into same-sized dice. Halve the cherry tomatoes.
Step 2
Heat 1 tbsp olive oil in a wok over high heat. Sear the halloumi for 3 minutes, set aside.
Step 3
Add the remaining oil, sauté the eggplant dice for 6 minutes, stirring until golden and tender.
Step 4
Add the cherry tomatoes, cook for 2 minutes. Return the halloumi, sprinkle with za'atar, toss and serve.
