Grilled Sardines with Eggplant and Chermoula
Fresh sardines grilled over flame with tender eggplant and a fragrant Moroccan chermoula infused with cumin and coriander.

Ingredients
- 8 pieces Fresh sardines
- 1 large Eggplant
- 1 piece Tomato
- 1 bunch Fresh coriander
- 1 tsp Ground cumin
- 3 tbsp Olive oil
- 1 piece Lemon
Instructions
Step 1
Slice the eggplant into 1 cm thick slices. Prepare the chermoula: blend coriander, cumin, lemon juice, and 1 tbsp of oil.
Step 2
Oil and salt the sardines and eggplant slices.
Step 3
Grill the eggplant for 4 minutes per side, then the sardines for 3 minutes per side.
Step 4
Arrange the sardines on the eggplant, drizzle with chermoula, and garnish with diced tomato.
