Colombian Sancocho
A hearty traditional Colombian stew with beef, plantains, and root vegetables, slowly simmered in a flavorful broth.

Ingredients
- 700 g Beef stew meat
- 3 piece Green plantains
- 400 g Yams
- 300 g Malanga
- 3 ear Fresh corn
- 2 piece Onions
- 4 clove Garlic
- 20 g Cilantro
- 2 l Beef broth
- 10 g Salt and pepper
Instructions
Step 1
Brown the beef in a pot with diced onions and garlic until golden.
Step 2
Pour in the broth and bring to a boil. Reduce heat and simmer for 30 minutes.
Step 3
Cut the plantains, yams, and malanga into thick chunks.
Step 4
Add the root vegetables and corn to the broth. Cook for 25 minutes.
Step 5
Season with salt, pepper, and fresh cilantro just before serving.
