Warm Potato and Lentil Salad
A comforting French salad where cooked potatoes and lentils are tossed with fresh greens. Perfect as an appetizer or light main course.

Ingredients
- 300 g Potatoes
- 80 g Green lentils
- 100 g Salad greens
- 800 ml Water
- 3 tbsp Olive oil
- 1 tbsp Vinegar
- 1 pinch Salt
- 1 pinch Pepper
Instructions
Step 1
Cut the potatoes into small dice.
Step 2
Bring water to a boil. Add potatoes and lentils.
Step 3
Cook for 18-20 minutes until tender.
Step 4
Drain and let cool slightly.
Step 5
Make a vinaigrette with oil, vinegar, salt, and pepper.
Step 6
Toss the potatoes and lentils with the vinaigrette, then add fresh greens. Serve warm.
