Warm Lentil and Apple Salad
An original and balanced salad combining lentils, apples, and spinach with a light vinaigrette. The sweet-savory quality of the apple pairs beautifully with the lentils.

Ingredients
- 200 g Green lentils
- 2 piece Apples
- 100 g Fresh spinach
- 1 stalk Celery
- 400 ml Water
- 2 tbsp White vinegar
- 3 tbsp Olive oil
- 0.5 tbsp Mustard
- 1 tsp Salt
- 0.5 tsp Pepper
Instructions
Step 1
Cook the green lentils in boiling salted water for 18-20 minutes until tender. Drain and set aside.
Step 2
Meanwhile, dice the apples finely and cut the celery into small pieces.
Step 3
Prepare the vinaigrette by whisking together the white vinegar, mustard, olive oil, salt, and pepper.
Step 4
In a large bowl, combine the warm lentils, apples, celery, and fresh spinach.
Step 5
Pour the vinaigrette over the salad and toss gently.
Step 6
Serve warm or at room temperature.
