Warm Lentil and Beet Salad with Walnuts
A nutritious and colorful salad combining cooked lentils, roasted beets, and crunchy walnuts, dressed with mustard. A simple yet flavorful dish inspired by French cuisine.

Ingredients
- 200 g Lentils
- 300 g Beet
- 100 g Walnuts
- 2 tbsp Mustard
- 3 tbsp Oil
- 500 ml Water
- 1 pinch Salt
- 1 pinch Pepper
Instructions
Step 1
Cook the lentils in salted boiling water for 25-30 minutes until tender
Step 2
Cut the beet into cubes and roast in the oven at 200°C for 25 minutes
Step 3
Roughly chop the walnuts by hand or with a food processor
Step 4
Mix the cooked lentils and roasted beets in a large bowl
Step 5
Prepare a vinaigrette with mustard, oil, salt and pepper, and pour over the salad
Step 6
Sprinkle with chopped walnuts and serve warm
