Nordic Shrimp and Fennel Salad with Dill
Pink shrimp on a bed of thinly sliced fennel and cucumber, flavored with fresh dill and lemon. A light and elegant Scandinavian salad.

Ingredients
- 350 g Cooked peeled shrimp
- 1 piece Fennel
- 1 piece Cucumber
- 15 g Fresh dill
- 2 tbsp Rapeseed oil
- 1 piece Lemon
Instructions
Step 1
Thinly slice the fennel on a mandoline. Cut the cucumber into half-rounds. Chop the dill.
Step 2
Prepare the vinaigrette by mixing the rapeseed oil, lemon juice, and half of the dill.
Step 3
Arrange the fennel and cucumber in a salad bowl. Add the shrimp, drizzle with vinaigrette, and sprinkle with remaining dill.
