Vegetarian Niçoise Salad with Eggs and Feta
A vegetarian twist on the classic Niçoise salad featuring hard-boiled eggs, feta cheese, crisp green beans, black olives, and a Provençal vinaigrette.

Ingredients
- 4 piece eggs
- 120 g feta
- 200 g green beans
- 2 piece tomatoes
- 60 g black olives
- 2 tbsp olive oil
Instructions
Step 1
Cook the eggs in boiling water for 10 minutes. Blanch the green beans for 5 minutes in another pot, then cool them in ice water.
Step 2
Cut the tomatoes into wedges and halve the hard-boiled eggs. Crumble the feta.
Step 3
Arrange the green beans, tomatoes, and olives on plates. Top with eggs and feta. Drizzle with olive oil.
