Salade Niçoise with Chicken, Green Beans and Anchovies
A protein-rich version of the classic Niçoise salad featuring grilled chicken instead of tuna, crispy green beans, tomatoes, black olives, and soft-boiled egg. The Côte d'Azur on a plate.

Ingredients
- 280 g Chicken breasts
- 150 g Green beans
- 2 piece Tomatoes
- 2 piece Eggs
- 40 g Black olives
- 2 tbsp Olive oil
Instructions
Step 1
Cook green beans in salted boiling water for 8 minutes. Plunge into ice water to keep them crispy.
Step 2
Grill seasoned chicken breasts 5 minutes per side. Cook soft-boiled eggs for 6 minutes.
Step 3
Cut tomatoes into wedges and slice the chicken.
Step 4
Arrange all ingredients on plates, add halved eggs and olives. Drizzle with olive oil.
