Mediterranean Lentil and Roasted Tomato Salad
A hearty salad with green lentils, roasted cherry tomatoes, and grilled zucchini, flavored with Herbes de Provence and balsamic vinegar.

Ingredients
- 250 g Cooked green lentils
- 200 g Cherry tomatoes
- 1 piece Zucchini
- 1 tsp Herbes de Provence
- 2 tbsp Balsamic vinegar
- 2 tbsp Olive oil
Instructions
Step 1
Preheat the oven to 200°C. Cut the cherry tomatoes in half and the zucchini into rounds. Arrange on a baking sheet, drizzle with olive oil, and sprinkle with Herbes de Provence.
Step 2
Bake the vegetables for 18-20 minutes until the tomatoes are caramelized and the zucchini is golden.
Step 3
Place the lentils in a salad bowl, add the warm roasted vegetables, and drizzle with balsamic vinegar. Toss gently.
