Lebanese Salad with Red Lentils, Cucumber and Mint
A fresh and nourishing salad with tender red lentils, crispy cucumber and tomatoes, elevated with cumin and a zesty lemon-mint vinaigrette.

Ingredients
- 120 g Red lentils
- 1 piece Cucumber
- 2 pieces Tomatoes
- 15 leaves Fresh mint
- 1 tsp Cumin powder
- 3 tbsp Lemon juice
- 1 tbsp Olive oil
Instructions
Step 1
Rinse the red lentils and cook them in boiling water for 10-12 minutes until tender but not mushy. Drain and let cool slightly.
Step 2
Dice the cucumber and chop the tomatoes into pieces. Chiffonade the fresh mint.
Step 3
Mix the warm lentils with the vegetables. Season with cumin, drizzle with lemon juice and olive oil, and sprinkle with mint.
