Italian Roast Beef Salad with Arugula and Parmesan
Thin slices of roast beef atop peppery arugula, with Parmesan shavings and sun-dried tomatoes, drizzled with olive oil and lemon juice. Simple, fresh, and elegant.

Ingredients
- 250 g Cooked roast beef
- 100 g Arugula
- 40 g Sun-dried tomatoes
- 40 g Parmesan
- 2 tbsp Olive oil
- 1 tbsp Lemon juice
Instructions
Step 1
Thinly slice the roast beef and shave the Parmesan using a vegetable peeler.
Step 2
Arrange the arugula in a salad bowl and add the sun-dried tomatoes sliced into strips.
Step 3
Layer the roast beef slices on top and sprinkle with Parmesan shavings.
Step 4
Drizzle with olive oil and lemon juice, season with salt and pepper.
