Indian Salad with Spiced Chickpeas and Spinach
A warm and fragrant salad with roasted chickpeas seasoned with garam masala, fresh spinach and tomatoes, finished with a squeeze of lemon juice and fresh coriander.

Ingredients
- 250 g chickpeas (canned)
- 150 g fresh spinach
- 2 pieces tomatoes
- 2 tsp garam masala
- 2 tbsp olive oil
- 2 tbsp lemon juice
Instructions
Step 1
Rinse and drain the chickpeas, pat dry with paper towels. Mix with olive oil and garam masala.
Step 2
Roast the chickpeas in a hot pan for 12-15 minutes, stirring regularly, until crispy.
Step 3
Cut the tomatoes into dice. Place fresh spinach in a bowl, add the tomatoes and hot chickpeas, then drizzle with lemon juice.
