Indian Lentil and Spinach Salad
A warm salad of green lentils and fresh spinach, seasoned with cumin and turmeric, dressed with spiced yogurt sauce.

Ingredients
- 150 g green lentils
- 150 g fresh spinach
- 2 piece tomatoes
- 100 g plain yogurt
- 1 tsp ground cumin
- 0.5 tsp turmeric
- 1 tbsp lemon juice
Instructions
Step 1
Rinse the lentils and cook them in salted boiling water for 18-20 minutes until tender. Drain.
Step 2
Wash the spinach and dice the tomatoes. Mix the yogurt with the cumin, turmeric, and lemon juice.
Step 3
In a salad bowl, combine the warm lentils with the spinach and tomatoes. Top with the spiced yogurt sauce.
