Spanish Salad with Manchego and Hard-Boiled Eggs
A rustic Spanish salad featuring shaved manchego cheese, hard-boiled eggs, piquillo peppers, arugula, and a drizzle of sherry vinegar.

Ingredients
- 120 g manchego cheese
- 4 pieces eggs
- 150 g piquillo peppers
- 100 g arugula
- 2 tbsp sherry vinegar
- 2 tbsp olive oil
Instructions
Step 1
Boil the eggs for 10 minutes in boiling water. Cool in ice water and peel.
Step 2
Drain the piquillo peppers and cut them into strips. Shave the manchego cheese using a vegetable peeler.
Step 3
Arrange the arugula on plates, add the peppers, eggs cut into quarters, and manchego shavings. Dress with olive oil and sherry vinegar.
