Marinated Tempeh Salad with Herbs and Peppers
Crumbled tempeh marinated in a mustard and fresh herb vinaigrette, served with crispy peppers and arugula. A protein-rich Mediterranean dish.

Ingredients
- 250 g tempeh
- 1 piece red bell pepper
- 80 g arugula
- 1 tbsp Dijon mustard
- 2 tbsp olive oil
- 1 piece lemon
- 15 g fresh parsley
Instructions
Step 1
Crumble the tempeh into small pieces by hand or with a knife.
Step 2
Make the vinaigrette by mixing the mustard, lemon juice, and olive oil. Pour over the tempeh and let marinate for 5 minutes.
Step 3
Slice the pepper into thin strips. Chop the parsley. Mix everything together with the arugula and serve.
