Hawaiian Quinoa Salad
Pearl quinoa mixed with fresh pineapple, macadamia nuts, papaya and honey-ginger vinaigrette. A fresh and exotic appetizer.

Ingredients
- 200 g Quinoa
- 300 g Fresh pineapple
- 200 g Papaya
- 80 g Macadamia nuts
- 0.5 piece Red onion
- 10 g Fresh mint
- 30 ml Honey
- 10 g Fresh ginger
- 30 ml Lime juice
- 40 ml Olive oil
Instructions
Step 1
Cook the quinoa for 15 minutes in boiling water, then let cool.
Step 2
Cut the pineapple and papaya into cubes.
Step 3
Thinly slice the red onion.
Step 4
Prepare the vinaigrette by mixing honey, ginger, lime juice and olive oil.
Step 5
Combine the quinoa, fruits, onion and nuts.
Step 6
Pour the vinaigrette over and garnish with fresh mint.
