Green Papaya Salad (Som Tam)
A spicy and crunchy Thai salad with shredded green papaya, fish sauce, and peanuts: a fresh and well-balanced starter.

Ingredients
- 1 piece green papaya
- 2 piece tomato
- 100 g long beans
- 2 piece lime
- 3 clove garlic
- 2 piece fresh chili
- 2 cl fish sauce
- 1 tsp cane sugar
- 40 g unsalted peanuts
- 20 g whole peanuts
Instructions
Step 1
Peel and finely shred the green papaya. Cut the beans and tomatoes into small pieces.
Step 2
Crush the peanuts. Finely mince the garlic and chilis.
Step 3
In a bowl, combine the garlic and chilis with sugar, crushing slightly.
Step 4
Add the fish sauce and lime juice. Mix well.
Step 5
Add the papaya, beans, tomatoes, and crushed peanuts. Toss gently.
Step 6
Transfer to serving plates and garnish with whole peanuts.
