Grilled Halloumi and Crispy Vegetables Salad
A generous salad with golden pan-fried halloumi, crispy cucumbers and cherry tomatoes, dressed with a lemon and fresh mint vinaigrette.

Ingredients
- 200 g Halloumi
- 1 piece Cucumber
- 200 g Cherry tomatoes
- 10 leaf Fresh mint
- 2 tbsp Olive oil
- 2 tbsp Lemon juice
Instructions
Step 1
Cut the halloumi into 1 cm slices. Slice the cucumber into half-moons and halve the cherry tomatoes.
Step 2
Grill the halloumi in a hot pan without oil, 2-3 minutes on each side until golden brown.
Step 3
Arrange the vegetables in a bowl, add the hot halloumi, drizzle with olive oil and lemon juice, and sprinkle with chopped mint.
