Herb-Crusted Cod Salad with Zucchini
Poached cod fillet served warm over thin zucchini ribbons and mixed greens, finished with fresh parsley and chives.

Ingredients
- 2 piece Cod fillet
- 2 piece Zucchini
- 100 g Mixed greens
- 1 bunch Fresh parsley
- 1 bunch Chives
- 2 tbsp Olive oil
- 1 piece Lemon
Instructions
Step 1
Cut the zucchini into thin ribbons using a vegetable peeler. Chop the parsley and chives.
Step 2
Poach the cod in gently simmering salted and lemon-infused water for 8 to 10 minutes.
Step 3
Arrange the mixed greens and zucchini ribbons on plates, flake the cod over the top.
Step 4
Drizzle with olive oil and lemon juice, sprinkle with fresh herbs.
