Warm Salad with Apples and Roasted Lentils
An original salad combining crispy roasted lentils, diced apples, tender spinach, and a honey-mustard vinaigrette. Warm and satisfying.

Ingredients
- 200 g Cooked green lentils
- 2 piece Apples
- 150 g Fresh spinach
- 1 stalk Celery
- 3 tbsp Olive oil
- 2 tbsp White vinegar
- 1 tbsp Honey
- 1 tbsp Dijon mustard
- 0.5 tsp Salt
- 0.5 tsp Pepper
Instructions
Step 1
Prepare the vinaigrette by whisking together vinegar, honey, mustard, and 2 tbsp oil.
Step 2
Prepare the ingredients: dice the apples into small pieces and finely chop the celery.
Step 3
Pour the lentils into a pan with 1 tbsp oil and roast for 8-10 minutes until crispy.
Step 4
Deglaze the hot lentils with the vinaigrette.
Step 5
Arrange the spinach on plates, add the apples and celery.
Step 6
Pour the hot lentils over the spinach and serve immediately.
