Vegetarian Caesar Salad with Soft-Boiled Eggs
A vegetarian take on classic Caesar salad featuring creamy soft-boiled eggs, shaved Parmesan, and a light Greek yogurt-based Caesar dressing.

Ingredients
- 4 pieces eggs
- 1 piece romaine lettuce
- 40 g Parmesan
- 3 tbsp Greek yogurt
- 150 g cherry tomatoes
- 1 tsp Dijon mustard
Instructions
Step 1
Plunge the eggs into boiling water for 6 minutes to achieve soft-boiled consistency. Immediately cool in ice water and peel.
Step 2
Wash and shred the romaine, halve the cherry tomatoes. Prepare the dressing by mixing the Greek yogurt, mustard, and half of the grated Parmesan.
Step 3
Arrange the salad on plates, drizzle with Caesar dressing, top with halved eggs and remaining Parmesan shavings.
