Carrot Rösti with Sautéed Apples
Crispy potato and carrot pancakes served with caramelized apples. A satisfying and well-balanced dish.

Ingredients
- 600 g Potatoes
- 200 g Carrots
- 3 piece Apples
- 4 tbsp Olive oil
- 1 tbsp Sugar
- 1 pinch Salt
- 1 pinch Pepper
- 1 tsp Fresh or dried thyme
Instructions
Step 1
Peel and finely grate the potatoes and carrots. Drain the mixture well.
Step 2
Peel the apples and slice them thinly.
Step 3
Heat 1 tbsp of oil in a pan. Cook the apples with sugar and thyme until caramelized. Set aside.
Step 4
In the same pan, heat 2 tbsp of oil over medium-high heat. Add the potato-carrot mixture, season with salt and pepper.
Step 5
Cook for 12-15 minutes without stirring to form a golden crust, then mix and cook another 3-5 minutes until everything is crispy.
Step 6
Serve the rösti with the caramelized apples on top.
