Fried Rice with Eggs and Vegetables
An Asian classic: crispy fried rice with eggs, fresh vegetables, and soy sauce. Complete, satisfying, and ready in 25 minutes with basic supermarket ingredients.
Ingredients
- 250 g Rice
- 2 piece Eggs
- 1 medium Onions
- 100 g Carrots
- 100 g Frozen peas
- 3 tbsp Soy sauce
- 2 tbsp Oil
- 1 pinch Salt
- 1 pinch Pepper
Instructions
Step 1
Cook the rice according to package directions or use pre-cooked frozen rice. If using raw rice, start by boiling it for 15-18 minutes.
Step 2
Meanwhile, peel and finely mince the onions and carrots into small dice.
Step 3
In a wok or large skillet, heat the oil over high heat.
Step 4
Stir-fry the onions and carrots for 3-4 minutes until tender.
Step 5
Pour the cooked rice into the wok, add the peas, and stir well for 2 minutes.
Step 6
Push the rice to the sides of the wok, pour the beaten eggs in the center, and scramble them lightly before mixing thoroughly with the rice.
Step 7
Pour in the soy sauce, mix well, taste, and adjust seasoning with salt and pepper as needed.
