Fried Rice with Eggs and Carrots
Simple Asian-style fried rice with scrambled eggs and sautéed carrots. Quick, flavorful, and perfect for dinner.

Ingredients
- 250 g Cooked rice (leftovers or quick cook)
- 2 piece Eggs
- 150 g Carrots
- 60 g Leeks
- 2 tbsp Neutral oil
- à volonté pinch Salt
- à volonté pinch Pepper
Instructions
Step 1
Cut the carrots into small dice and the leeks into thin rounds.
Step 2
Heat the oil in a large skillet or wok over medium-high heat. Sauté the carrots and leeks for 5 minutes.
Step 3
Add the rice, breaking it up well with a spoon to avoid lumps. Stir-fry for 3 minutes.
Step 4
Push the rice to the sides. Pour the beaten eggs in the center and scramble, then mix with the rice.
Step 5
Season with salt and pepper, and serve hot.
