Stir-Fried Rice with Olives and Eggs
A simple Asian-style fried rice with olives, scrambled eggs and crispy bread on the side. A complete and flavorful dish ready in 25 minutes.

Ingredients
- 300 g Cooked rice
- 2 piece Eggs
- 80 g Black olives
- 3 slice White bread
- 3 tbsp Olive oil
- 1 pinch Salt
- 1 pinch Pepper
- 1 tbsp Soy sauce
Instructions
Step 1
Cut the bread into cubes and brown in a pan with a touch of oil, set aside.
Step 2
In the wok or pan, stir-fry the rice for 3 minutes with the oil.
Step 3
Push the rice to the sides, pour the beaten eggs in the center and scramble for 2 minutes.
Step 4
Mix the rice and eggs together, add the olives and soy sauce.
Step 5
Serve with the bread croutons and a sprinkle of pepper.
