Stir-Fried Rice with Asparagus and Apples (Thai-Style)
A delicious stir-fried rice with tender asparagus, sweet apples, and a hint of onion. Aromatic and well-balanced, perfect for an exotic weeknight dinner.
Ingredients
- 250 g cooked white rice
- 150 g Asparagus
- 150 g Apples
- 2 piece Eggs
- 1 piece Onion
- 30 ml Oil
- 30 ml Soy sauce
- 2 clove Garlic
- 1 pinch Salt
- 1 pinch Pepper
Instructions
Step 1
Cut the asparagus into 2 cm pieces, peel and dice the apple, and mince the onion and garlic.
Step 2
Lightly beat the eggs.
Step 3
Heat the oil in a wok or large skillet over high heat and cook the onion for 2 minutes.
Step 4
Add the garlic and asparagus, cook for 4 minutes.
Step 5
Add the diced apples and continue cooking for 2 minutes.
Step 6
Push the vegetables to the sides and pour the beaten eggs into the center of the skillet, lightly scrambling them.
Step 7
Add the rice and soy sauce, toss vigorously for 3-4 minutes. Season with salt and pepper.
