Asian-Inspired Fried Rice with Apples and Quinoa

Ingredients
- 200 g White rice
- 100 g Quinoa
- 150 g Asparagus
- 100 g Spinach
- 2 piece Apples
- 3 tbsp Oil
- 3 tbsp Soy sauce
- 1 tsp Fresh ginger
- 2 cloves Garlic
- 1 pinch Salt
- 1 pinch Pepper
Instructions
Step 1
Cook the rice and quinoa according to package directions (they can be cooked together or separately).
Step 2
Cut the asparagus diagonally, dice the apples, and mince the garlic.
Step 3
Heat the oil in a wok or large pan over high heat, add the garlic and ginger.
Step 4
Add the asparagus and stir-fry for 5 minutes.
Step 5
Add the cooked rice-quinoa mixture, spinach, and apples, drizzle with soy sauce.
Step 6
Mix well and heat for 2 minutes, then season and serve.
