Vegetarian Curry Rice
A mild and flavorful curry with rice, onions and spices. Delicious and easy, perfect for a weeknight dinner.

Ingredients
- 150 g rice
- 1 medium onion
- 1 tbsp curry powder
- 200 ml coconut milk
- 150 ml water
- 2 cl oil
- 1 pinch salt
- 1 pinch pepper
Instructions
Step 1
Finely slice the onion.
Step 2
Heat the oil in a pot over medium heat, add the onion and cook for 3 minutes.
Step 3
Add the curry powder, stir and cook for 1 minute.
Step 4
Add the rice, coconut milk and water. Bring to a boil.
Step 5
Cover, reduce heat and simmer for 15 minutes until the liquid is absorbed.
Step 6
Season with salt and pepper, serve hot.
