Quinoa Risotto with Broccoli and Mustard

Ingredients
- 250 g Quinoa
- 600 g Broccoli
- 30 g Mustard
- 150 g Cheese
- 40 g Butter
- 750 ml Water
- 5 g Salt
- 2 g Pepper
Instructions
Step 1
Cut the broccoli into small florets. Bring salted water to a boil in a pot.
Step 2
Add the quinoa to the boiling water and cook for 15 minutes until completely absorbed.
Step 3
Blanch the broccoli for 5 minutes in boiling water, then drain.
Step 4
Fold the broccoli into the cooked quinoa. Add the mustard, butter, and grated cheese. Mix gently. Season and serve.
