Creative Risotto with Clementines, Fennel, and Pistachio

Ingredients
- 280 g Arborio rice
- 250 g Fennel
- 3 piece Clementines
- 700 ml Vegetable broth
- 100 ml Sour cream
- 80 g Pistachios
- 30 g Butter
- 2 tbsp Olive oil
- 1 tsp Salt
- 0.5 tsp Pepper
Instructions
Step 1
Finely slice the fennel and squeeze the juice from the clementines.
Step 2
Heat the vegetable broth in a pot.
Step 3
In a pan, sauté the fennel in olive oil for 3 minutes.
Step 4
Add the rice and toast for 2 minutes while stirring.
Step 5
Add the clementine juice and deglaze.
Step 6
Add the hot broth ladle by ladle, stirring constantly, for 18 minutes.
Step 7
Finish with butter, sour cream, and crushed pistachios. Season to taste.
