Creative Risotto with Mandarins, Broccoli, and Smoked Parmesan
A sophisticated Italian take on risotto combining the brightness of mandarins with fresh broccoli and smoked Parmesan. A delicious balance of sweet and savory flavors.
Ingredients
- 250 g Broccoli
- 4 piece Mandarins
- 300 g Arborio rice
- 800 ml Vegetable broth
- 150 ml Dry white wine
- 100 g Grated smoked Parmesan
- 40 g Butter
- 30 ml Olive oil
- 1 piece Shallot
- 5 g Salt
- 3 g White pepper
Instructions
Step 1
Heat the vegetable broth in a pot and keep it at a gentle simmer.
Step 2
Cut the broccoli into small florets and blanch for 3 minutes, then drain.
Step 3
Juice the mandarins and reserve the zest from one mandarin.
Step 4
Finely mince the shallot and sauté in olive oil in a large skillet.
Step 5
Add the rice and stir for 2 minutes to toast it lightly.
Step 6
Deglaze with white wine and let it absorb completely.
Step 7
Add the hot broth gradually, one ladle at a time, stirring constantly for 18-20 minutes.
Step 8
Incorporate the blanched broccoli and mandarin juice 3 minutes before the end.
Step 9
Finish the risotto: add the butter and smoked Parmesan, stirring vigorously.
Step 10
Season with salt and white pepper, garnish with mandarin zest.
