Creative Risotto with Caramelized Banana and Prosciutto
An avant-garde Italian risotto where the sweetness of caramelized banana harmonizes beautifully with salty prosciutto and parmigiano-reggiano. A surprising and refined dish.
Ingredients
- 2 piece Bananas
- 120 g Prosciutto
- 280 g Arborio Rice
- 800 ml Chicken Stock
- 150 ml Dry White Wine
- 80 g Parmigiano-Reggiano
- 1 piece White Onion
- 50 g Butter
- 30 ml Oil
- 3 g Salt
- 2 pinch Pepper
- 20 g Sugar
Instructions
Step 1
Heat the stock in a saucepan over low heat.
Step 2
Peel and slice the bananas, then caramelize them in butter with sugar for 4 minutes. Set aside.
Step 3
Finely chop the onion and prosciutto.
Step 4
Pour the oil into the pan and sauté the onion for 3 minutes.
Step 5
Add the rice and stir for 2 minutes until slightly translucent.
Step 6
Deglaze with the white wine and wait for it to be absorbed.
Step 7
Add the stock one ladle at a time, waiting for absorption before each addition. Stir regularly for 18 minutes.
Step 8
At the end of cooking, stir in the butter, parmigiano, and prosciutto.
Step 9
Gently fold in the caramelized bananas, season to taste, and serve immediately.
