Asian-Inspired Risotto with Broccoli and Potatoes

Ingredients
- 200 g quinoa
- 300 g broccoli
- 200 g potato
- 500 ml water
- 30 ml olive oil
- 5 g salt
- 2 g pepper
Instructions
Step 1
Cut the potatoes into small dice and the broccoli into florets.
Step 2
Heat the oil in a pan and cook the potatoes for 10 minutes.
Step 3
Add the quinoa and water, cook covered for 12 minutes.
Step 4
Add the broccoli and cook for 3 more minutes.
Step 5
Season with salt and pepper, and serve hot.
