Orange and Soy Sauce Risotto
An Asian-Italian fusion risotto combining arborio rice, fresh orange juice, carrots, and soy sauce for a delicate umami flavor. An elaborate and sophisticated dish.
Ingredients
- 300 g Arborio rice
- 3 piece Oranges
- 200 g Carrots
- 100 g Potatoes
- 800 ml Chicken broth
- 30 ml Soy sauce
- 40 g Butter
- 20 ml Oil
- 1 piece White onion
- 2 clove Garlic
- 10 g Fresh ginger
- 3 g Salt
- 2 g White pepper
Instructions
Step 1
Squeeze the oranges and collect 300ml of fresh juice.
Step 2
Finely chop the onion, garlic, ginger, and carrots.
Step 3
Heat the broth in a pot over low heat.
Step 4
Heat the oil in a pan and sauté the onion and garlic.
Step 5
Add the rice and toast for 2 minutes while stirring.
Step 6
Deglaze with the orange juice and let it absorb.
Step 7
Gradually add the broth while stirring constantly for 18 minutes.
Step 8
Stir in the diced carrots and cook for 5 more minutes.
Step 9
Finish with butter, soy sauce, salt, and white pepper.
