Turkey Rillettes with Pickles and Mustard

Ingredients
- 300 g Turkey thighs
- 50 g Pickles
- 15 g Flat parsley
- 2 tbsp Whole grain mustard
- 50 g Fresh cheese (such as Saint-Môret)
- 1 piece Shallot
Instructions
Step 1
Poach the turkey thighs in simmering salted water with the shallot for 25 minutes. Cool in the cooking liquid.
Step 2
Shred the turkey with a fork. Finely chop the pickles and parsley.
Step 3
Mix the shredded turkey with the fresh cheese, mustard, pickles, and parsley. Season to taste.
Step 4
Serve the rillettes in small glasses or on endive leaves. Serve chilled.
