Pork and Miso Ramen
A rich miso broth topped with braised pork, soft-boiled egg, bamboo shoots and nori seaweed, served with ramen noodles.
Ingredients
- 300 g Pork (shoulder)
- 800 ml Dashi broth
- 4 tbsp Red miso paste
- 2 piece Eggs
- 80 g Bamboo shoots
- 30 g Green onions
- 2 tbsp Soy sauce
- 1 tbsp Sugar
- 3 clove Garlic
- 15 g Fresh ginger
Instructions
Step 1
Boil the eggs for 7 minutes for a soft-boiled egg.
Step 2
Sear the pork in a hot pan for 8 minutes on each side to get a golden crust.
Step 3
In a pot, bring the dashi broth to a boil with garlic and ginger.
Step 4
Add the pork to the broth with soy sauce and sugar, let simmer for 15 minutes.
Step 5
Dilute the miso paste in a little hot broth, then stir it into the pot.
Step 6
Prepare the ramen noodles according to package directions.
Step 7
Peel the cooled eggs.
Step 8
Arrange the noodles in bowls, pour the broth and pork, garnish with soft-boiled egg, bamboo shoots and green onions.
