Roasted Quinoa with Broccoli and Fennel

Ingredients
- 200 g Quinoa
- 350 g Broccoli
- 200 g Fennel
- 400 ml Water
- 3 tbsp Olive oil
- 1.5 tsp Salt
- 0.5 tsp Pepper
Instructions
Step 1
Rinse the quinoa under cold water
Step 2
Cook the quinoa in salted water for 15 minutes
Step 3
Meanwhile, chop the broccoli and fennel into bite-sized pieces
Step 4
Toss the vegetables with 2 tbsp of oil, salt, and pepper on a baking sheet
Step 5
Roast in a 200°C oven for 25 minutes
Step 6
Mix the cooked quinoa with the roasted vegetables and remaining oil
