Chicken Tikka Masala with Cashews
A simplified delicious Indian curry with creamy cashews and flavorful coconut milk. Serve with rice or pasta.
Ingredients
- 600 g farm chicken
- 100 g cashews
- 400 ml coconut milk
- 2 tsp curry powder
- 2 piece onion
- 200 g crushed tomato
- 3 clove garlic
- 10 g fresh ginger
- 2 tbsp olive oil
- 1 pinch salt
- 1 pinch pepper
Instructions
Step 1
Cut the chicken into cubes and dice the onions. Mince the garlic and ginger.
Step 2
Soak the cashews in hot water for 5 minutes, then blend with 200ml coconut milk until smooth and creamy.
Step 3
Heat the olive oil in a skillet and sear the chicken for 5 minutes over medium-high heat.
Step 4
Add the onions, garlic, and ginger, then cook for 3 minutes, stirring.
Step 5
Add the curry, crushed tomato, and remaining coconut milk. Mix well.
Step 6
Pour in the cashew cream and simmer for 10 minutes over medium heat. Season with salt and pepper.
Step 7
Serve hot with white rice or pasta.
