Asian-Style Stir-Fried Chicken with Rice and Vegetables
A quick Asian-inspired stir-fry with chicken, carrots, and potatoes. Served with white rice and a light soy and ginger sauce.

Ingredients
- 400 g chicken
- 2 pieces carrot
- 2 pieces potato
- 250 g white rice
- 3 tbsp soy sauce
- 1 2cm piece fresh ginger
- 2 cloves garlic
- 2 tbsp oil
- 1 pinch salt
- 1 pinch pepper
Instructions
Step 1
Cook the white rice according to package instructions.
Step 2
Cut the chicken into cubes and the carrots and potatoes into sticks. Peel and mince the ginger and garlic.
Step 3
Heat the oil in a pan and sear the chicken over high heat for 5 minutes.
Step 4
Add the ginger, garlic, and vegetables. Stir-fry for 8 minutes, stirring regularly.
Step 5
Pour in the soy sauce, season with salt and pepper. Toss for 2 minutes and serve over the rice.
