Grilled Herb Chicken with Roasted Vegetables
Savory roasted chicken served with roasted potatoes and carrots, seasoned with fresh herbs and garlic. A simple yet delicious classic.

Ingredients
- 1200 g Farmhouse chicken
- 600 g Potato
- 400 g Carrot
- 3 clove Garlic
- 1 sprig Fresh thyme
- 1 leaf Bay leaf
- 4 tbsp Olive oil
- 1 pinch Salt
- 1 pinch Pepper
Instructions
Step 1
Preheat oven to 200°C. Peel and cut potatoes and carrots into quarters.
Step 2
Place the chicken in a baking dish, drizzle with oil, season generously with salt and pepper.
Step 3
Arrange vegetables around the chicken, add crushed garlic, thyme and bay leaf.
Step 4
Bake at 200°C for 40-45 minutes, basting the chicken halfway through cooking.
Step 5
Let rest for 5 minutes before serving the chicken with roasted vegetables.
