Grilled Harissa Chicken with Eggplant and Mint
Spiced chicken thighs with harissa, served alongside tender eggplant slices and fresh mint. North African flavors ready in 30 minutes.

Ingredients
- 300 g boneless chicken thighs
- 1 piece eggplant
- 1 tbsp harissa
- 1 tbsp olive oil
- 6 leaf fresh mint
- 2 piece tomatoes
Instructions
Step 1
Coat the chicken thighs with harissa and a drizzle of olive oil. Let marinate for 5 minutes.
Step 2
Slice the eggplant into 1 cm rounds and cut the tomatoes into wedges.
Step 3
Grill the chicken for 7 to 8 minutes on each side over high heat.
Step 4
Grill the eggplant rounds and tomato wedges for 3 minutes on each side. Serve topped with fresh chopped mint.
