Cold Chicken with Chimichurri and Grilled Peppers
Sliced cold chicken topped with fresh Argentine chimichurri made with parsley and oregano, accompanied by grilled peppers and marinated red onion.

Ingredients
- 300 g Chicken breasts
- 1 piece Red bell pepper
- 1 piece Red onion
- 30 g Flat parsley
- 5 g Fresh oregano
- 2 tbsp Red wine vinegar
- 2 tbsp Olive oil
Instructions
Step 1
Cook the chicken breasts in a hot skillet for 5 minutes per side. Cool completely, then slice thinly.
Step 2
Grill the whole pepper under the broiler for 5 minutes, turning occasionally. Peel and cut into strips. Slice the red onion very thinly.
Step 3
Make the chimichurri: finely chop the parsley and oregano, then mix with olive oil and vinegar.
Step 4
Arrange the sliced cold chicken with the pepper strips and onion. Generously drizzle with chimichurri.
