Cold Mexican-Style Shredded Chicken with Avocado

Ingredients
- 280 g chicken breasts
- 1 piece avocado
- 2 piece tomatoes
- 15 g fresh cilantro
- 1 piece lime
- 1 piece jalapeño pepper
- 1 tsp ground cumin
Instructions
Step 1
Poach the chicken breasts in simmering water with cumin for 15 minutes. Let cool then shred with a fork.
Step 2
Dice the tomatoes, cube the avocado, and slice the jalapeño thinly. Chop the cilantro.
Step 3
Mix the vegetables with lime juice, season with salt and pepper to make the salsa.
Step 4
Divide the cold shredded chicken among bowls, top with fresh salsa, and serve.
