Easy Chicken Curry with Rice

Ingredients
- 600 g Chicken
- 200 g Carrot
- 200 g Potato
- 30 ml Oil
- 400 ml Water
- 2 tbsp Curry powder
- 200 ml Coconut milk
- 5 g Salt
- 2 g Pepper
- 250 g White rice
Instructions
Step 1
Cook the rice according to package instructions. Set aside.
Step 2
Cut the chicken into cubes, and the carrots and potatoes into small pieces.
Step 3
Heat the oil in a pan and brown the chicken 3 minutes on each side.
Step 4
Add the vegetables and curry powder, stir for 2 minutes.
Step 5
Pour in the water and coconut milk, simmer for 15 minutes until the chicken is cooked and vegetables are tender.
Step 6
Season with salt and pepper. Serve over the rice.
