Easy Curry Coconut Chicken
A mild and flavorful curry with tender chicken swimming in a coconut-tomato sauce. Served with white rice, it's a truly relaxing culinary experience.

Ingredients
- 400 g Chicken
- 200 g Broccoli
- 400 ml Coconut milk
- 200 g Crushed tomatoes
- 2 tsp Curry powder
- 1 piece Onion
- 2 tbsp Oil
- 1 pinch Salt
- 1 pinch Pepper
Instructions
Step 1
Cut the chicken into regular cubes, the broccoli into florets, and mince the onion.
Step 2
Heat the oil in a pan and cook the onion for 2 minutes.
Step 3
Add the curry powder and mix well for 1 minute.
Step 4
Add the chicken and brown it for 3 minutes, stirring.
Step 5
Pour in the coconut milk and crushed tomatoes, then add the broccoli.
Step 6
Simmer covered for 15 minutes, then season with salt and pepper to taste.
Step 7
Serve hot with white rice or pasta.
