Grilled Portobello Mushrooms with Pesto and Zucchini Ribbons
Portobello mushrooms coated with homemade pesto and grilled alongside delicate zucchini ribbons. An elegant and vegetarian Italian-inspired dish.

Ingredients
- 4 pieces portobello mushrooms
- 2 pieces zucchini
- 3 tbsp basil pesto
- 20 g pine nuts
- 1 tbsp olive oil
- 100 g cherry tomatoes
Instructions
Step 1
Remove the stems from the portobello mushrooms. Using a vegetable peeler, cut the zucchini into thin ribbons. Halve the cherry tomatoes.
Step 2
Brush the portobello mushrooms with olive oil and spread the pesto over them.
Step 3
Grill the portobello mushrooms for 5 minutes on each side, along with the zucchini ribbons and tomatoes for 2-3 minutes.
Step 4
Arrange the portobello mushrooms over the zucchini ribbons, sprinkle with toasted pine nuts, and serve.
