Tropical Poke Bowl with Red Lentils and Clementines

Ingredients
- 100 g Red lentils
- 100 g Quinoa
- 4 piece Clementines
- 2 piece Kiwis
- 2 tbsp Mustard
- 3 tbsp Olive oil
- 10 g Fresh ginger
- 1 tbsp Honey
- 500 ml Water
- 1 pinch Salt
Instructions
Step 1
Cook lentils and quinoa separately in salted boiling water (15 and 12 minutes respectively).
Step 2
Prepare the sauce: whisk together mustard, oil, grated ginger, and honey.
Step 3
Peel and segment the clementines. Slice the kiwis.
Step 4
Assemble the bowls: quinoa and lentils as the base, top with fruit, drizzle with sauce.
