Teriyaki Chicken Poké Bowl with Cauliflower Rice
A modern poké bowl featuring juicy teriyaki chicken over a bed of cauliflower rice, topped with edamame, avocado, and cucumber. Hawaiian spirit in a low-carb version.

Ingredients
- 300 g Chicken breasts
- 300 g Cauliflower
- 1 piece Cucumber
- 1 piece Avocado
- 80 g Shelled edamame
- 2 tbsp Soy sauce
- 1 tbsp Sesame oil
Instructions
Step 1
Grate the cauliflower using a food processor or box grater to make cauliflower rice. Slice the cucumber into rounds and the avocado into slices.
Step 2
Sauté the cauliflower rice in a bit of sesame oil for 3 minutes over medium heat, then set aside.
Step 3
Dice the chicken and stir-fry it over high heat for 8 minutes. Add the soy sauce at the end and caramelize for 1 minute.
Step 4
Arrange the cauliflower rice in bowls and top with teriyaki chicken, cucumber, avocado, and edamame.
